A rich and aromatic soup bursting with vibrant flavors of coconut milk, lemongrass, and chilies, paired with tender mussels for a satisfying seafood experience.

📋 Ingredients:

  • 2 lbs (900g) fresh mussels, scrubbed & debearded
  • 1 tbsp coconut oil (or vegetable oil)
  • 1 stalk lemongrass, bruised & cut into 3-inch pieces
  • 3-4 kaffir lime leaves (or 1 tbsp lime zest)
  • 1-inch ginger, thinly sliced
  • 3 garlic cloves, minced
  • 1 shallot (or small onion), finely chopped
  • 1-2 Thai red chilies (or 1 tsp chili paste), adjust to taste
  • 1 red bell pepper, thinly sliced
  • 1 can (13.5 oz / 400ml) coconut milk
  • 2 cups seafood or vegetable broth
  • 1 tbsp fish sauce (or soy sauce for vegetarian option)
  • 1 tsp palm sugar (or brown sugar)
  • Juice of 1 lime
  • Fresh cilantro & Thai basil for garnish
  • Lime wedges for serving

1️⃣ Prep the mussels: Discard any open or cracked mussels. Rinse well under cold water.
