4 Ingredients You Need:
- 4 liters (about 1 gallon) whole milk (preferably organic, not ultra-pasteurized)
- 1 ½ teaspoons citric acid (dissolved in ¼ cup cool water)
- ¼ teaspoon liquid rennet (or 1/4 rennet tablet dissolved in ¼ cup cool water)
- 1 teaspoon salt (or to taste)
Instructions:
- Heat the milk
Pour milk into a large pot. Slowly heat to 32°C (90°F) over medium heat, stirring gently. - Add citric acid
When the milk reaches temperature, stir in the citric acid solution. You’ll see milk start to curdle. - Add rennet
Remove from heat, add the rennet solution, and stir gently for 30 seconds. Cover and let sit undisturbed for 5 minutes. - Cut and heat the curds
Cut the curds into small cubes. Return the pot to low heat and slowly warm to 41°C (105°F), stirring gently. - Drain and knead
Scoop out the curds with a slotted spoon into a bowl. Microwave for 30 seconds or dip in hot water until stretchy. Knead with a spoon or your hands until smooth and elastic. Add salt to taste. - Shape and cool
Shape into balls or logs. Drop into ice water for 5 minutes to firm up.
