Ingredients:
For the steak roll-ups:
•1 lb. thinly sliced sirloin steak, pounded thin and cut into 1”x3” strips 🥩
•2 Tbsp avocado or olive oil (divided) 🥑🫒
•3 bell peppers (assorted colors), cut into thin strips 🌶️
•1 large yellow onion, sliced into strips 🧅
•2-3 green onions, sliced (green parts) 🌿
•Fresh parsley or cilantro, chopped 🌿
For the fajita seasoning:
•1 tsp chili powder 🌶️
•1 tsp ground cumin 🌱
•1 tsp garlic powder 🧄
•1/2 tsp dried oregano 🌿
•1/2 tsp smoked paprika 🌶️
•1/2 tsp sea salt 🧂
•1/4 tsp ground black pepper
Instructions:
1.Prepare the fajita seasoning: In a small bowl, mix together the chili powder, cumin, garlic powder, oregano, smoked paprika, sea salt, and black pepper. Set aside.
2.Cook the vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the bell peppers, yellow onion, and green onions. Cook, stirring frequently, until softened and slightly charred (about 5-7 minutes). Remove from skillet and set aside.
3.Prepare the steak: Lay out the thinly sliced steak on a flat surface. Sprinkle both sides with the prepared fajita seasoning. Place a few strips of cooked vegetables on one end of each steak strip, then roll the steak around the veggies.
4.Cook the roll-ups: In the same skillet, heat the remaining 1 tablespoon of oil. Place the steak roll-ups in the pan, seam side down, and cook for about 2-3 minutes on each side, until the steak is browned and cooked through.
5.Garnish and serve: Remove from the skillet, sprinkle with fresh parsley or cilantro, and serve hot. You can enjoy them on their own or pair them with your favorite dipping sauce!
