Garlic Parmesan Chicken and Potatoes

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs (optional for extra crunch)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme or Italian seasoning
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • Fresh parsley, chopped (for garnish)

For the Potatoes:

  • 4-5 medium potatoes, cut into 1-inch cubes (Yukon Gold or red potatoes work well)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1-2 tablespoons chopped fresh parsley (optional)

Instructions:

  1. Prep the Chicken:
    • Preheat your oven to 400°F (200°C).
    • In a shallow bowl, mix the Parmesan cheese, breadcrumbs (if using), garlic powder, dried thyme, salt, and pepper.
    • Dredge each chicken breast in the mixture, pressing down slightly to coat them evenly on all sides.
  2. Cook the Potatoes:
    • In a large bowl, toss the cubed potatoes with olive oil, garlic powder, rosemary, salt, and pepper.
    • Spread the potatoes evenly on a baking sheet lined with parchment paper or foil.
  3. Sear the Chicken:
    • Heat 2 tablespoons of olive oil in a large oven-safe skillet (preferably cast iron) over medium-high heat.
    • Once hot, add the chicken breasts and sear for about 2-3 minutes on each side until golden brown.
  4. Bake:
    • Place the skillet with the chicken in the oven, along with the baking sheet with the potatoes.
    • Bake both for about 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender and golden.
  5. Add Garlic Parmesan Topping:
    • About 5 minutes before the dish is done, sprinkle the remaining grated Parmesan cheese over the potatoes and chicken.
    • If you like a stronger garlic flavor, you can add minced garlic to the chicken breasts in the last 5 minutes of baking, letting it bake with the chicken.
  6. Serve:
    • Once everything is cooked, remove from the oven and garnish with fresh chopped parsley.
    • Serve the chicken alongside the garlic Parmesan potatoes, and enjoy!
