French Onion Mac & Cheese

Ingredients:

8 ounces of macaroni, boiled and strained
6 pieces of bacon, prepared and fragmented
¼ cup of salted butter, split
1 onion, quartered and thinly sliced
7 ounces of shredded gruyere cheese
2 cloves of garlic, minced
2 tablespoons of all-purpose flour
½ cup of heavy cream
1 ½ cups of whole milk
Salt and pepper to taste

Instructions:

1. In a skillet, caramelize onions and garlic in half of the butter over medium heat for 15-20 mins. Set aside.

2. In the same skillet, melt remaining butter, add flour, and whisk for 1-2 mins to make a roux.

3. Gradually whisk in milk, cooking until thickened for 3-4 mins.

4. Stir in shredded Gruyere until the sauce is smooth. Add cream, salt, and pepper, stirring to combine.

5. Combine cooked macaroni, caramelized onions, and cheese sauce in the skillet. Mix well and add most of the bacon, saving some for topping.

6. Ensure everything is evenly distributed, then top with the reserved bacon.

Optional: Turn on the oven’s broiler and place the skillet under it for a few minutes until the top is golden and bubbly. Carefully remove from the oven, cool briefly, and serve your delicious French Onion Skillet Mac & Cheese!
