These Crockpot Creamy Chicken
Nachos are a game-changer for busy weeknights! Simply throw everything
in the crockpot and let it do the work while you kick back and relax.

Ingredients:
2 lbs boneless, skinless chicken
1 packet taco seasoning
1 can (10 oz) cream of chicken soup
1 cup chicken broth
1 can (10 oz) diced tomatoes with
green chilies
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1 cup black beans, drained and
rinsed (optional)
Tortilla chips, for serving
Optional toppings: sliced jalapeños,
diced avocado, sour cream, chopped
cilantro, green onions
Instructions:
Prepare the Chicken:
Place the chicken breasts in the
crockpot. Sprinkle the taco
seasoning over the chicken.
Add the Creamy Ingredients:
Pour the cream of chicken soup,
chicken broth, and diced tomatoes
(with juice) over the chicken. Add the
cream cheese on top.
Cook:
Cover and cook on low for 6-7 hours
or on high for 3-4 hours, until the
chicken is cooked through and
tender.
Shred the Chicken:
Once cooked, remove the chicken
and shred it with two forks. Return
the shredded chicken to the crockpot and stir everything together. Add the black beans if using.
Add Cheese:
Sprinkle the shredded cheddar
cheese on top and cover again until
the cheese melts (about 10
minutes).
Serve:
Serve the creamy chicken mixture
over tortilla chips and top with your favorite toppings.
