Ingredients:
1 lb (450g) ground chicken
1/4 cup grated Parmesan cheese (optional)
1/2 cup finely chopped onion
1/2 cup all-purpose flour
2 cloves garlic, minced
1/2 cup chopped fresh parsley or cilantro
1 large egg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika or cayenne pepper (optional for a bit of heat)
1/4 teaspoon baking powder
Vegetable oil for frying
Instructions:
- Mix Ingredients: In a large bowl, combine the ground chicken, flour, Parmesan cheese (if using), onion, garlic, parsley, egg, salt, pepper, and paprika or cayenne pepper. Mix until well combined.
- Prepare to Fry: Heat about 2 tablespoons of vegetable oil in a large skillet over medium heat.
- Form Fritters: Take a tablespoon of the mixture and form a small patty with your hands. Place the patty in the hot skillet. Repeat with the remaining mixture, but don’t overcrowd the skillet.
- Cook Fritters: Fry the fritters for about 3-4 minutes per side, or until they are golden brown and cooked through. You may need to add more oil as you cook the remaining fritters.
- Drain and Serve: Remove the fritters from the skillet and drain them on paper towels. Serve hot.
