Chicken Noodle Soup

Here’s a classic and comforting Chicken Noodle Soup recipe that’s easy to make and perfect for any day:

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth (preferably low-sodium)
  • 2 cups cooked chicken, shredded (rotisserie chicken works great)
  • 1 ½ cups egg noodles (or any pasta of your choice)
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 tablespoon lemon juice (optional for brightness)

Instructions:

  1. Prepare the Vegetables:
    • In a large pot, heat the olive oil over medium heat.
    • Add the onion, carrots, and celery, and sauté for about 5-7 minutes, until the vegetables soften and the onion becomes translucent.
  2. Add Garlic and Seasonings:
    • Add the minced garlic to the pot and cook for another 1 minute until fragrant.
    • Stir in the bay leaf, thyme, salt, and pepper.
  3. Add the Broth:
    • Pour in the chicken broth and bring it to a simmer over medium-high heat.
    • Once it’s simmering, lower the heat to medium-low and let it cook for 10 minutes
