One Pot Creamy Vegetable Soup

Ingredients:
- 2 tbsp olive oil or butter
- 1 onion, diced
- 3 garlic cloves, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 zucchini, diced (optional)
- 1 cup cauliflower florets (or broccoli)
- 1 (14 oz) can diced tomatoes
- 4 cups vegetable broth (or chicken broth)
- 1 tsp dried thyme
- 1 tsp dried oregano
- ½ cup heavy cream or coconut milk (for creaminess)
- 1 cup spinach or kale (chopped)
- Salt & pepper to taste
- Garnish: Fresh parsley, grated Parmesan, or croutons
Instructions:
- Sauté Vegetables:
- Heat oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 mins until softened.
- Add Remaining Veggies & Broth:
- Stir in zucchini, cauliflower, diced tomatoes, broth, thyme, oregano, salt, and pepper. Bring to a boil.
- Simmer:
- Reduce heat, cover, and simmer for 15-20 mins until veggies are tender.
- Creamy Finish:
- Stir in heavy cream and spinach. Cook 2-3 mins until spinach wilts.
- Serve:
- Adjust seasoning and garnish with fresh herbs or cheese.
