Ingredients:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 carrot, diced (optional)
  • 1 celery stalk, diced (optional)
  • 1 (28 oz) can crushed tomatoes
  • 2 (15 oz) cans white beans (cannellini or great northern), drained/rinsed
  • 3 cups vegetable broth (or chicken broth)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • Salt & black pepper to taste
  • 1/2 cup heavy cream or coconut milk (for creaminess, optional)
  • Fresh parsley or basil, to garnish

Instructions:

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery. Sauté for 5 mins until softened.
  2. Add Tomatoes & Beans: Stir in crushed tomatoes, white beans, broth, basil, oregano, smoked paprika, salt, and pepper. Bring to a boil.
  3. Simmer: Reduce heat and simmer for 15-20 mins, stirring occasionally.

  5. Finish: Stir in heavy cream or coconut milk (if using). Adjust seasoning.
