Homemade Mozzarella Cheese with 4 Ingredients – Healthy and Delicious!

4 Ingredients You Need:

  • 4 liters (about 1 gallon) whole milk (preferably organic, not ultra-pasteurized)
  • 1 ½ teaspoons citric acid (dissolved in ¼ cup cool water)
  • ¼ teaspoon liquid rennet (or 1/4 rennet tablet dissolved in ¼ cup cool water)
  • 1 teaspoon salt (or to taste)

Instructions:

  1. Heat the milk
    Pour milk into a large pot. Slowly heat to 32°C (90°F) over medium heat, stirring gently.
  2. Add citric acid
    When the milk reaches temperature, stir in the citric acid solution. You’ll see milk start to curdle.
  3. Add rennet
    Remove from heat, add the rennet solution, and stir gently for 30 seconds. Cover and let sit undisturbed for 5 minutes.
  4. Cut and heat the curds
    Cut the curds into small cubes. Return the pot to low heat and slowly warm to 41°C (105°F), stirring gently.
  5. Drain and knead
    Scoop out the curds with a slotted spoon into a bowl. Microwave for 30 seconds or dip in hot water until stretchy. Knead with a spoon or your hands until smooth and elastic. Add salt to taste.
  6. Shape and cool
    Shape into balls or logs. Drop into ice water for 5 minutes to firm up.
