Bread and Butter Pickles

Ingredients:
– 4 cups sliced cucumbers (about 4 medium cucumbers)
– 1 cup sliced onions
– 1/4 cup kosher salt
– 1 1/2 cups white vinegar
– 1 cup granulated sugar
– 1/2 teaspoon mustard seeds
– 1/2 teaspoon celery seeds
– 1/4 teaspoon ground turmeric

Directions:
1. Prepare the Cucumbers: In a large bowl, mix the sliced cucumbers and onions with kosher salt. Cover the mixture with ice and let it sit for 1-2 hours to draw out excess water. Afterward, rinse and drain well.

2. Make the Pickling Liquid: In a medium saucepan, combine the white vinegar, granulated sugar, mustard seeds, celery seeds, and turmeric. Heat over medium, stirring until the sugar has fully dissolved and the mixture begins to simmer.

3. Pickle the Cucumbers: Add the drained cucumbers and onions to the hot pickling liquid. Cook for 2-3 minutes, then remove from heat.

4. Jar the Pickles: Carefully transfer the mixture into sterilized jars, ensuring that the cucumbers are completely submerged in the liquid. Seal the jars tightly.

5. Chill and Serve: Allow the pickles to cool to room temperature before placing them in the refrigerator. For the best flavor, let them sit for at least 24 hours before enjoying.
