Cranberry Jello Salad with Cream Cheese

Ingredients:

For the Cranberry Jello Layer:
• 1 (6 oz) box raspberry or cranberry-flavored Jello
• 2 cups boiling water
• 1 (14 oz) can whole cranberry sauce
• 1 (20 oz) can crushed pineapple, drained
• 1/2 cup chopped walnuts (optional)

For the Cream Cheese Topping:
• 8 oz cream cheese, softened
• 1 cup sour cream
• 1/4 cup powdered sugar
• 1 tsp vanilla extract

Instructions:

Prepare the Jello Layer:

In a large mixing bowl, dissolve the Jello powder in 2 cups of boiling water, stirring until fully dissolved.
Add the whole cranberry sauce and drained crushed pineapple, stirring until well combined. If desired, stir in the chopped walnuts for extra texture and crunch.
Pour the mixture into a 9×13-inch dish, smoothing out the top with a spatula. Refrigerate for at least 4 hours or overnight, until fully set.
Prepare the Cream Cheese Topping:

In a separate bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.
Add the sour cream, powdered sugar, and vanilla extract. Continue beating until the mixture is light and fluffy.
Assemble the Salad:

Once the Jello layer has completely set, spread the cream cheese mixture evenly over the top. Use a spatula to smooth the surface.
Refrigerate for at least 1 more hour to allow the flavors to meld together.
