Slow Cooker Chicken Pot Pie Soup

Ingredients:

2 diced carrots that have been peeled

Diced onion, one medium-sized

2 stalks of chopped celery

Three minced cloves of garlic

2-cups of chopped potatoes, either russet or Yukon Gold

1 cup of defrosted frozen peas

corn, 1 cup, frozen

A pound of skinless, boneless chicken breasts or thighs

Ingredients: 4 cups of chicken stock

using one cup of heavy cream

Add 1 and 3/4 cups of white flour to make it thicker.

The seasonings:

thyme, dry, 1 teaspoon

1/2 teaspoon of smoked paprika

*Salt to taste, or half a teaspoon

black pepper, 1/4 teaspoon

Biscuits, puff pastry, or crackers to top it off are optional.

Instructions:

1. Get All the Necessary Ingredients

Chopped carrots, celery, onion, garlic, and potatoes should all go into the slow cooker.

After you’ve layered the veggies, add the chicken.

Season with salt, pepper, smoked paprika, and thyme.

Toss the ingredients with the chicken stock and mix gently to incorporate.

Next, bring the soup to a boil.

Once the chicken is cooked and the veggies are soft, cover and simmer for 6-8 hours on low heat or 3-4 hours on high heat.

Third, Debone the Chicken.

Take the chicken out of the slow cooker and divide it into smaller pieces using two forks.

Put back into the slow cooker the chicken that has been shredded.

4. Add Creaminess

Combine the flour and heavy cream in a small bowl and whisk until combined and free of lumps.

While stirring, pour the cream mixture into the slow cooker.

Toss in the corn and frozen peas.

To thicken the soup, cover and continue cooking on high heat for another 20-30 minutes.

5. Fine-tune and Present

Add more salt or pepper to taste after tasting the soup.

With crackers, puff pastry, or warm biscuits, serve immediately.

Baking Duration:

Duration: 6-8 hours on low heat

Under extreme heat: three to four hours
